Valentine's Day...Not for Couples Only!

But Valentine's Day is not just a day for couples to express their love.  Of course, everyday we wake up to a new sunrise is a day to celebrate and extend love.   Valentine's Day is also a fun opportunity to show love and appreciation to a friend, a neighbor, sister, brother, mother, father ...your favorite postal clerk ...teacher ...you get the idea.

It's also a day for chocolate lovers to have a blast. (of course, everything in moderation)

Inspired by Oprah Winfrey's favorite things section in O Magazine, here's:   Kiki's Six Favorite Chocolates on Valentine's Day.


NUMBER 1 - HOT COCOA MOUSSE - (Betty Crocker.com)

You won't believe how easy this is.  Here's the recipe.  WARNING:  You'll want to whip it up the minute you see it.  Plug in the mixer after you see the other four.  You'll be glad you did.

One pint (2 cups) heavy whipping cream                                       
1/2 cup powdered sugar
2 packages (1.25 oz each) instant hot cocoa mix
1/4 teaspoon ground cinnamon
1 teaspoon vanilla
Whipped cream, if desired
Ground cinnamon, if desired
                                                                                                 

  • Step 1 - In medium bowl, beat whipping cream with electric mixer on high speed until cream begins to thicken.
  • Step 2 -  On medium speed, beat in powdered sugar and cocoa mix until blended. Add 1/4 teaspoon cinnamon and the vanilla; beat on high speed until soft peaks form.
  • Step 3 -  Spoon mousse into individual dessert dishes. Garnish with whipped cream; sprinkle with cinnamon. Refrigerate until ready to serve.

Serve this hot cocoa mousse in small coffee cups. The presentation is adorable, and looks just like a cup of hot cocoa.
Change up your mousse by using different varieties of hot cocoa mix—milk chocolate, dark chocolate, mint—all would be delicious.
